A little bit of history today, as we cannot just ignore something Epic like this Christian holiday as Easter.

Today is a GOOD Friday.

The holiday is observed during Holy Week as part of the Paschal Triduum on the Friday preceding Easter Sunday, and may coincide with the Jewish observance of Passover.

In this country, many people go away for a short vacation with family and friends. Millions would decorate Easter Eggs with multitude of colors. By the way, this egg coloring tradition comes to the USA from Germany and Austria by ways of immigrants of last century. Look at this picture with 10,000 colored eggs on a tree. Each year the Graft family in Germany gets together to decorate their tree in the front yard. It’s become a tradition with hundreds of tourists visiting their house.

    good morning Happy Good Friday to you all well I make Easter dinner and the family comes to my home for dinner we are decorating eggs tonight them dinner tomorrow at my brother in laws then Sunday dinner at my house so that’s what we do but I love them eggs in the pic above have beautiful

      Good morning to all. I am staying home but wish I could go on mini vacation. 🙂 We are decorating eggs tomorrow and going to my moms on Easter Sunday for dinner. Then Monday I am having dinner here for my boys and their father.

      I am at home! We only have a 3 day weekend (or at least dd and I do – hubby has 4 days) so we’ll be staying at home! Need to go shopping today for groceries (need eggs! LOL) and we promised dd we’d take her to see Rio 2 today.

      Tomorrow am will be usual. Pilates afterward we are heading to a egg hunt.
      Sunday will be at my parents house. This will be the first major holiday since we lost my dad suddenly so I know it will be a rough one.

    Easter Salad: Strawberry, Kiwi, And Spinach Salad

    “What a wonderful surprise the dressing is in this refreshing salad. Raspberry jam is swirled into raspberry vinegar, and then mixed with oil. This luscious dressing is tossed with the kiwi, strawberries, walnuts and spinach. Makes eight servings.”

    Ingredients:
    2 tablespoons raspberry vinegar
    2 1/2 tablespoons raspberry jam
    1/3 cup vegetable oil
    8 cups spinach, rinsed and torn into bite-size pieces
    1/2 cup chopped walnuts
    8 strawberries, quartered
    2 kiwis, peeled and sliced

    Directions:
    1. Mix together raspberry vinegar, raspberry jam, and vegetable oil in a small container.
    2. Combine spinach, nuts, strawberries, and kiwi in a salad bowl. Toss with raspberry dressing.

      Thanks I am going to have to try to make this for my family for something different. I know my kids would love this but I don’t like vinegar. I can eat pickles and olives but no dressings at all. Maybe I will have to try it without the vinegar for myself. 🙂

      I typically don’t put fruits in my salads but this actually looks kind of good to me. I think only my daughter and I would eat it though .I cant get my boys to eat any sort of salad.We have a local grocery store (Wegmans )that I have them sample foods like this at (they have a spinach, mandarin orange, strawberry one very similar that I tried recently and actually liked)

      This looks good! I’m not usually one for fruits in my salads either! But it has 2 of my favorites – strawberries and kiwis!

    Easter Dinner: Blissful Rosemary Chicken

    rosemary chicken

    Ingredients:
    4 sprigs fresh rosemary
    4 skinless, boneless chicken breast
    halves – pounded to 1/4 inch thickness
    4 slices smoked fontina cheese
    4 slices prosciutto
    1/2 cup white wine
    1/2 cup chicken broth
    1/4 cup olive oil
    1 tablespoon freshly ground black pepper
    4 cloves garlic, halved
    salt to taste

    Directions:
    1. Use a knife or grater to sharpen the thick ends of the rosemary sprigs. Soak sprigs in water for at least 10 minutes.
    2. Preheat oven to 425 degrees F (220 degrees C).
    3. Layer each chicken breast with 1 slice fontina and 1 slice prosciutto. Roll tightly, and skewer each with a rosemary sprig to secure.
    4. In a bowl, whisk together the wine, broth, oil and pepper. Pour into a medium baking dish. Place rolled chicken breasts in the dish. Place 2 garlic halves under each breast.
    5. Bake 25 minutes in the preheated oven, until chicken juices run clear. Remove from baking dish, reserving sauce, and allow to stand 5 minutes.
    6. Transfer remaining sauce to a saucepan, and bring to a boil. Drizzle over chicken to serve. Season chicken with salt to taste.

    Easter Dinner: Crustless Spinach Quiche

    crustless spinach quiche

    Ingredients:
    1 tablespoon vegetable oil
    1 onion, chopped
    1 (10 ounce) package frozen chopped
    spinach, thawed and drained
    5 eggs, beaten
    3 cups shredded Muenster cheese
    1/4 teaspoon salt
    1/8 teaspoon ground black pepper

    Directions:
    1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
    2. Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
    3. In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
    4. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

    Easter Breakfast or Brunch: Breakfast Pies

    Ingredients:
    3/4 pound breakfast sausage
    1/8 cup minced onion
    1/8 cup minced green bell pepper
    1 (12 ounce) can refrigerated biscuit
    dough
    3 eggs, beaten
    3 tablespoons milk
    1/2 cup shredded Colby-Monterey Jack
    cheese

    Directions:
    1. Preheat oven to 400 degrees F (200 degrees C).
    2. In a large, deep skillet over medium-high heat, combine sausage, onion and green pepper. Cook until sausage is evenly brown. Drain, crumble, and set aside.
    3. Separate the dough into 10 individual biscuits. Flatten each biscuit out, then line the bottom and sides of 10 muffin cups. Evenly distribute sausage mixture between the cups. Mix together the eggs and milk, and divide between the cups. Sprinkle tops with shredded cheese.
    4. Bake in preheated oven for 18 to 20 minutes, or until filling is set.

      Hmmmm….my stomach is a rumbling too 🙂 I am not a fan of breakfast sausage and only 2 of my kids like it at all but I think if I substituted that for some bacon these Breakfast pies would be a HUGE hit with the family 😀

      My Grandmom makes something very similar for Easter brunch and other holidays, but she makes it in a 12×9 casserole dish

    Easter Brunch or Dinner: California Grilled Veggie Sandwich

    California Grilled Veggie Sandwich

    Ingredients:
    1/4 cup mayonnaise
    3 cloves garlic, minced
    1 tablespoon lemon juice
    1/8 cup olive oil
    1 cup sliced red bell peppers
    1 small zucchini, sliced
    1 red onion, sliced
    1 small yellow squash, sliced
    2 (4-x6-inch) focaccia bread pieces, split
    horizontally
    1/2 cup crumbled feta cheese

    Directions:
    1. In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.
    2. Preheat the grill for high heat.
    3. Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.
    4. Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don’t burn. Remove from grill, and layer with the vegetables. Enjoy as open faced grilled sandwiches.

      I think this is a great light dinner and so much better for you then all the big dinner like we will have for Easter so it will be refreshing to try it I like new ideal to try gets away from the same old boring things

    Easter Desserts: Mini Cheesecakes

    Mini Cheesecakes

    Ingredients:
    Crust:

    1/3 cup graham cracker crumbs
    1 tablespoon white sugar
    1 tablespoon margarine, melted

    Filling:
    1 (8 ounce) package cream cheese,softened
    1/4 cup white sugar
    1 1/2 teaspoons lemon juice
    1/2 teaspoon grated lemon zest
    1/4 teaspoon vanilla extract
    1 egg

    Directions:
    1. Preheat oven to 325 degrees F (165 degrees C). Grease a 6-cup muffin pan.
    2. In a medium bowl, mix together the graham cracker crumbs, sugar, and margarine with a fork until combined. Measure a rounded tablespoon of the mixture into the bottom of each muffin cup, pressing firmly. Bake in the pre-heated oven for 5 minutes, then remove to cool. Keep the oven on.
    3. Beat together the cream cheese, sugar, lemon juice, lemon zest and vanilla until fluffy. Mix in the egg.
    4. Pour the cream cheese mixture into the muffin cups, filling each until 3/4 full. Bake at 325 degrees F (165 degrees C) for 25 minutes. Cool completely in pan before removing. Refrigerate until ready to serve.

    Easter Desserts: The Best Lemon Bars

    lemon bars dessert

    Ingredients:
    1 cup butter, softened
    1/2 cup white sugar
    2 cups all-purpose flour
    4 eggs
    1 1/2 cups white sugar
    1/4 cup all-purpose flour
    2 lemons, juiced

    Directions:
    1. Preheat oven to 350 degrees F (175 degrees C).
    2. In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9×13 inch pan.
    3. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
    4. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. For a festive tray, make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green. After both pans have cooled, cut into uniform 2 inch squares and arrange in a checker board fashion.

        These are great! I’ll make them, too, bite-size. I like rich desserts in small bites.
        Also, ghese are great to freeze. And when you feel like reaching out for desserts – go for a bite-size lemon bar!

      These can’t be the best lemon bars because my mom makes the best lemon bars. Does anyone have an extra moist carrot cake recipe? I’m always looking for a good carrot cake but haven’t found the perfect recipe yet.

    i have never tried to make lemon bars, but i hear they are kind of hard to make to make sure they turn out right i will let my mom make them for me!

  12. I am a fan of Lemons but never found a lemon bar that I liked. Maybe if I make them homemade it might make a difference. My husbands loves them.
