As children, we may vehemently avoid a wide array of foods that are truly packed with nutrition for the bodies that crave it. But we do need to respect those moments and hope that when we grow up we will reconsider our positioning on the foods that we oppose. It has been studied why we as children may not “like” certain foods.
The discussion is around certain sensitivities, allergies and our bodies trying to tell us that certain foods raise risks for it. That is why some children could be capricious and strongly opposing certain foods. It is coming from their brain, not because of their “bad” behavior.
As we grow older and cross different stages of our lives – 20’s, 30’s, 40’s and so on, – we do need to push more RAW foods into our system. One of the major reason is that our bodies accumulate a ton of toxins during the life span. These toxins may be the culprit of inflammation and a wide array of diseases that can persist in the body.
Celery is one of the foods that is underestimated in its value. Yet it is the green raw gem that is rich in fiber, vitamin K, minerals, has anti-inflammatory properties and is ridiculously low in calories!
I have had an experiment for myself to eat at least 3-4 green stocks of celery a day for a week and observe my body’s reaction to such change. The way I felt the changes in my physical body were no less than refreshing and spectacular. I would like you to try this yourself and see what happens.

I am one of those people that grew up being a picky eater and I’ve never out grown it. Celery makes me gag. I know it’s so good for you! I can finally eat it cooked in a soup or stew but am very far away from being able to eat it raw.
I do like some veggies though. I love broccoli, asparagus, artichoke. I eat broccoli the most…raw and cooked.

Celery Is Antioxidant and anti-inflammatory properties
Celery is loaded with antioxidants, which fight free radicals and help the body manage oxidative stress. What’s more, recent studies have shown that celery can promote healthy levels of inflammation. Managing oxidative stress and inflammation is important for virtually every aspect of health.
I wonder if it’s something I could make into a drink or add to a smoothie. I think I could handle downing it as a drink. It’s the crunch and the strings that make it hard for me to eat. I’ve always had a problem with texture.

Celery I High in vitamin K + Good Source of FIBER
Fiber’s a nutrition all-star, promoting regularity, digestive health, weight management, blood sugar management, heart health, and more. Celery isn’t bursting at the seams with fiber, but it is a good source, providing 1.5 grams per 15 calories.
Celery is an excellent source of vitamin K, which plays an intricate role in blood clotting and is important for bone, heart, and blood vessel health.
Since I’m not a celery eater I have been drinking a kale drink (gag…lol) which is another good source of vitamin K. I will have to push my fiance to eat it more often. And keep attempting to get my son to try it.

I started on celery with the “bad taste” on my part. But I found a way to like it. And now – wow, I can eat it, eat it, eat it without any dip. I do not need a dip!
I just have a stock and eat it.
That’s my goal. I’d love to be able to eat it like that.
CELERY Is Heart Healthy!
With its fiber, vitamin K, and antioxidant content, it’s no surprise that celery helps protect heart health. In fact, with its cholesterol- and blood pressure-lowering compounds, celery may help maintain cholesterol and blood pressure within healthy ranges.

Celery Is Low in Calories + High in Versatility!
For starters, forget the idea that there are “negative calorie” foods. That said, a cup of celery contains a measly 16 calories, making it the consummate low-energy-dense foods (LEDF), which allow you to eat more food (which helps you feel full) yet fewer calories.
There are so many ways to incorporate this root vegetable into foods. Of course, you can eat it raw, and I’ll share one of my favorite ways next. But I also like to dice it up in chicken, tuna, and egg salads.
Celery is also a fundamental ingredient in the classic mirepoix, a mix of diced veggies (usually also including onions and carrots) that’s used for making stock, soups, chili, roasts, and more.
Now that’s something I can work with, using it to make a nice stock. I can enjoy it that way. I was even able to eat the stuffing this year that had celery added at Thanksgiving. That’s a biggie for me!

Use celery in may ways and enjoy it. The “secret” is in frequency of using that all good stuff. Every day is a good one!
I have some in the fridge as we speak. I may just try it in chicken salad. Just a small amount at first and very finely chopped. I do like a crunch in chicken salad so it might be something I can handle.
