Summer is at full swing with activities and trips and fun activities. Today’s AM Coffee is a reminder of the importance of eating in-season. With our economy and technology changing cultures and societies, we forget what eating in-season means. The mechanism that has been developed by millions of years calls us to take advantage of every season we live in: in food, in physical activity, sleep and personal care.
That being said, take advantage of summer-grown vegetables and fruit. Today’s attention is on Apricot – one of the golden gems known to humans. It is claimed that apricot trees go back to India 3000 BC. The Spanish explorers introduced this fruit to the Americas. Today, USA along with Italy, Greece, Spain, Russia and Turkey are considered to be the top producers of this nutritionally-rich fleshy fruit.
Offering a human body a plentiful of Vitamin A, C, potassium, iron, calcium, fiber and a thousand more of phytonutrients that we don’t even have a name for, apricots could be considered a well-being fruit. Vitamin A (Retinol) is a fat-soluble vitamin and dissolves in our body easily (taken we have some fat!). And with the fiber content in apricots, every bodily system reaps the benefits of well-being: heart and arteries, gut, skin, digestive organs. Wow, what a treasure do we have here!
Let’s get down to some more details what’s INSIDE this golden gem. When we know WHY’s and HOW’s, we tend to incorporate that knowledge into our lives with less resistance.

FIBER FOR YOUR HEART HEALTH, AND GUT, TOO
As we already know that inflammation lies at the root of all dis-eases, prevention plays a huge role.
Good food full in FIBER and ANTI-OXIDANTS supports our body in its daily fight with inflammatory processes that take place throughout our bodies. From cellular level to organs, bones, the body makes sure that inflammation fire pits are extinguished.
We can support this honorable deed our bodies do by eating well. APRICOTS are some of the golden fruit we can add to our in-season consumption.

In addition to that, we would love to emphasize that APRICOTS have Dietary Fiber in them that is good for your HEART.
FIBER reduces bad cholesterol that effects heart and arteries and increases good cholesterol at the same time.
The POTASSIUM content (the one in bananas as well) balances the electrolyte levels in our bodily ecosystem – that is essential for our HEART to pump blood and our MUSCLES to work properly. I do know this part and how it effects the muscles first-hand, as I am working out and running. If my body is low on electrolytes – wow, it hurts!
Have an apricot or two every day during the summer to build your reserves for winter time. Yes, it does help to secure the bodily reserves and strength for the cold part of the year. That’s the mechanism that has been worked out in the past few millions of years!

Good morning I love apricots. I love the fall, when they become ripe. So many options for making awesome food.
Gonna have to look for some apricots this weekend when I go shopping! Hoping they aren’t too expensive and I can find them!

If you have Trader Joe’s or Costco, go after apricot’s there.
I got mine at Trader Joe’s the other day. They are very affordable!
Also, for my recipe below, you can use DRIED apricots.
UNfortunately we don’t have a Trader Joe’s and I don’t have a Costco membership. I’ll have to check at Sam’s next time I go if I don’t see them at our grocery store. I might check Sprout’s too for organic ones.
This is great all the way around!! i Have a friend who is alive today only because his wife knew CPR… he had a widow maker and because she started it immediately here is here to talk about it today Its an amazing story!! And I must say if i lived alone my house would only be fruits and salad and steak!! and some yogurt!!!

Great Source of Vitamin A
What an invaluable source of RETINOL – Vitamin A – each apricot is!
You already know that Vitamin A is essential for our eye health. Vision is going down with age. But the right kind of food can support our eyes throughout the years we live on this planet. Retinol and Beta Carotene that are found in apricots reduce eye-related diseases such as MACULAR DEGENERATION. Read more about it HERE as well, we did an awareness campaign for it as well.
Keep in mind that Retinol is a FAT-Soluble Vitamin, make sure you get some good fats into your daily diet as well to absorb Vitamin A and deliver it to the cells of yours.
Eat a handful of fresh apricots in the summer. Grab a few dried pieces when fresh are not available.

Apricots Are A Great Source of IRON
What you need to know about IRON in apricots, it is the type that is called non-heme.
It means that it takes some time to be absorbed by the body. The longer it stays in our system, the better are our chances for anemia prevention.
TIP: Take some Vitamin C along to ensure better absorption of the non-heme iron.

Growing up we did not have a luxury of eating apricots or any of this fancy fruit.
It was a very, very rare snack, maybe once during the summer.
Now, with the abundance of everything we have in stores, we can add the nutritional value to our bodies any time of the year.
But eating in-season does count most.

Look, eating a few dried apricots or a couple of fresh ones truly improves digestive system.
With a great fiber content and vitamin profile, apricots serve as a full-fledged snack to fill us quickly and extinguish any food cravings.
Very few calories and a beautiful feeling inside.
TIP: Dried apricots have a higher sugar content. Rinse your TEETH to get rid of sugar and prevent any teeth cavities.

Depends on a fruit.
But to keep in mind it is DRIED version that is higher in sugar than its FRESH counterpart!

Coconut substitution can be any seeds you like: sesame, poppy seeds, even bread crumbs toasted!

Obviously, we are not doctors here and cannot give any recommendations.
All such things – refer to your DOCTOR!
What I know from my own experience, when the blood sugar is under control, a person eats the foods and food combinations that do not spike it out of control, fresh fruit is OK to eat.
Dried apricots are considered a LOW GLYCEMIC food for diabetics (GI 32).
If the blood sugar of concern, talk to the doctor and present the facts you know about apricots!
What you know can only empower you in every decision-making.
I may have to start eating them year round just for this benefit!!
